Apollo Inn offers a focused cocktail evening on the ground floor of McDonald House, where Flinders Lane meets Hosier Lane. The drinks list gives martini drinkers several starting points: dry, wet, Gibson and dirty versions sit alongside changing house cocktails. Choose it for a drink before dinner or make the bar your evening destination with dishes from the food menu.

Two classic A$26 martinis total A$52 per person before food and day surcharges. Small dishes include oysters, potato focaccia, duck liver parfait and whipped cod roe with crisps, while a Prawn Club, beef tartare or toasted Cubano can make the visit more substantial. Premium choices such as the caviar service have their own higher price, so a martini allowance should not stand in for the cost of a full evening’s food.
