Gymkhana
Regional Indian cooking, tandoor dishes and sharing menus at ARIA, including Las Vegas additions and a vegetarian tasting menu.
01 / The experience
Tandoor cooking, regional curries and a proper dinner to share.
Gymkhana gives a Las Vegas dinner a different centre of gravity: the tandoor, a biryani for the table and regional Indian dishes that reward ordering across the menu. Inside ARIA, it is a good choice for visitors who love a substantial restaurant meal but would rather spend the evening passing breads and curries than following a long, fixed progression of miniature courses.
The Las Vegas menu has its own dishes as well as the cooking that made the Gymkhana name familiar in London. Beef Shortrib Pepper Fry and Wagyu Keema Naan are two of the local additions. The first points towards a richly seasoned meat dish; the second puts minced beef into one of the breads you might otherwise order simply as an accompaniment. They are useful reasons to read the whole menu before settling on a curry and rice each.
Build the meal around contrasts. Chaat brings a different style of eating to the opening courses, while tandoor dishes, curries and biryanis give you several ways to shape the main part of dinner. A group can share a wider selection than a couple, but two people still have a real choice between ordering à la carte and taking a tasting menu. The vegetarian tasting menu is especially useful when you want the kitchen to design a complete meal around vegetables rather than assemble a collection of side dishes.
Drinks are part of the restaurant's individual character. Delhi Dalgona and Pina Col-Lassi draw on Indian flavours and familiar cocktail ideas; the latter takes its cue from coconut lassi and a piña colada. Regional punches served at the table give a group another shared element. Wine remains an option, but this is one restaurant where the cocktail list deserves attention alongside the food rather than only before it.
For an F1 trip, Gymkhana fits an evening when you want to sit down properly with the people you have travelled with. It can follow a day of sightseeing or become the main event on a night away from the circuit. ARIA's central location is convenient for guests already staying in the resort, though reaching the restaurant still involves an indoor walk from the front desk.
The important choice is how much structure you want. À la carte suits a table with favourite dishes and different appetites; a tasting menu lets the kitchen set the sequence. Either deserves enough time for the food, drinks and conversation. The late-evening age rule and the restaurant's minimum child age are in the practical details, so families can decide whether it belongs in their plan before making a reservation.
