Bazaar Meat by José Andrés
Shared Spanish-inspired bites, jamón and ambitious cuts of beef at Bazaar Meat’s current Palazzo location.
01 / The experience
A steak dinner with plenty to share before the steak.
Bazaar Meat works particularly well when several people want a memorable dinner together. The table can start with jamón Ibérico, pass around small plates and compare different preparations before moving to a substantial cut of beef. That makes the ordering a shared part of the evening, rather than eight people choosing eight separate mains. Its current home is on the lower level of The Palazzo, which is the location to use for reservations and transport.
José Andrés treats the steakhouse as a much broader subject than a grill and a list of cuts. Beefsteak tomato tartare borrows the presentation of a meat dish for a vegetable; bison carpaccio is presented Buffalo-style; jamón brings cured pork into the opening part of dinner. You can put those alongside the Bazaar ribeye for a meal that moves between Spanish influences and American steakhouse expectations.
There is room for a little extravagance without making every plate a luxury ingredient. José's Taco layers jamón Ibérico, a fried quail egg and caviar on nori. A caviar cone offers another small, elaborate bite, while a shared ribeye provides the main event. Ask the server to help with quantities: a table that orders several snacks, tartares and starters will need a different amount of beef from one heading straight for the grill.
This is a useful restaurant for a group whose tastes overlap without being identical. The menu extends to fish, poultry and vegetables, so choosing Bazaar Meat need not mean that everybody orders red meat. A vegetarian guest still needs a genuinely satisfying sequence agreed with the restaurant; a tomato starter alone is not the same thing as an equivalent dinner. For a mixed party, that conversation is more useful than choosing entirely by the name over the door.
The Palazzo setting makes it possible to keep dinner and the rest of the evening in one resort complex. Guests staying at The Venetian can reach it through the connected property, rather than arranging a taxi for a short journey that becomes complicated during road closures. From the Palazzo lobby, the grand staircase, escalator or lifts lead down towards the restaurant.
Choose this for a sociable celebration with food at the centre. An intimate, tightly paced counter menu is better served by é; Bazaar Meat gives you more say in what arrives and what you share. The bill follows those decisions closely, especially when premium beef, caviar and bottles of wine enter the order. Set a comfortable table budget before committing to the largest cuts, and leave time to enjoy the meal without a show starting immediately afterwards.
