01 / The experience

### Pascal Barbot’s curiosity at the table.

$$$$ EUR estimates per person: $ up to €35 · $$ up to €80 · $$$ up to €150 · $$$$ above €150. Meal supplements and extra drinks increase the total. Creative French cooking & Asian influences

Pascal Barbot's cooking and Christophe Rohat's attention to guests are the two strands behind Astrance. The restaurant describes their partnership through curiosity: one directed towards ingredients and flavours from elsewhere, the other towards the people at the table. At the rue de Longchamp address, that idea has a pale, restrained dining room as its setting.

#### Ingredients and the changing menu formats

The food draws on French produce while remaining open to influences such as Japanese rice, citrus and carefully chosen herbs. Products, sometimes wild, provide the starting point for combinations rather than a fixed national template. The appeal lies in how the accompaniments change the principal ingredient, with the sequence giving those contrasts room to develop.

The restaurant's offer changes through the week. The weekday Astrance experience and the simpler weekend cooking are different formats, so the day selected affects more than the reservation time. Lunch can also provide a shorter introduction than the longest menu. The current card and service define what is offered on the date, with pairings and additions extending the meal.

#### The Longchamp dining room and Salon Joël

Wooden tables and a quiet visual palette keep the room from competing with the plates. The private Salon Joël offers another setting upstairs, making a small private gathering different from a table in the main dining room. That room choice also has practical access implications to arrange with the restaurant.

The current Longchamp premises are on the Trocadéro side of Paris. Their importance is not only the location: they provide the present home for a restaurant whose character comes from the relationship between the kitchen, the service and a menu that continues to follow its own curiosity.
